What are Brownie Bites?

Brownie Bites are your favorite fudgy, chewy, homemade chocolate brownie recipe baked in a mini muffin pan.

This particular recipe for Brownie Bites is very rich, fudgy, and chocolatey–making it perfect for bite-sized portions. It’s definitely the best way to get a serious chocolate fix without needing a nap afterward!

The best part of this recipe is that the quantity of batter is fairly small and requires a minimal amount of ingredients. You don’t even need a mixer, baking powder, or baking soda!

Each brownie cup only requires a tablespoon of batter, allowing them to bake in a flash. This is super convenient since brownies are always on an “I need them RIGHT NOW” basis.

These little bites are also perfect for the folks that LOVE brownie edges. The exterior of these brownie bites get a nice crisp–but still chewy– edge all the way around the bite, while still maintaining a nice fudgy center.

How To make Chocolate Brownie Bites:

How to Make the Best Chocolate Brownie Bites

Makes 24 Brownie Bites

Adapted from America’s Test Kitchen “Chewy, Fudgy, Triple Chocolate Brownies”.

Ingredients for the brownies:

  • 5 oz (3/4 cup) dark chocolate or semi sweet chocolate chips
  • 4 tablespoons of unsalted butter
  • 1 tablespoon of unsweetened cocoa powder
  • 1 large whole egg + 1 large egg yolk
  • 2/3 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup of all purpose flour

Instructions:

Preheat the oven to 350º.

Generously spray a mini muffin tin with cooking spray or grease with butter. Set aside.

In a heatproof bowl, add the chocolate chips and the butter. Set the bowl over a small saucepan of barely simmering water–not boiling!

Melt the chocolate chips and butter slowly, stirring frequently until the mixture is completely melted and smooth.

Remove the chocolate mixture from the heat and whisk in the cocoa powder until smooth. Set aside.

In a separate bowl, whisk together the eggs, sugar, vanilla, and salt until well combined.

Add a couple of spoonfuls of the warm chocolate mixture to the egg and sugar mixture and whisk to temper the eggs.

Pour the remaining chocolate into the egg mixture and whisk until well combined.

Add the all purpose flour and stir with a wooden spoon or rubber spatula until just mixed.

Scoop the brownie batter into the greased muffin tin a tablespoon at a time (or use a #60 scoop).

Bake at 350º for 11-13 minutes until the centers have risen and cracked and a toothpick inserted comes out with very wet and fudgy crumbs–the toothpick should NOT come out clean.

Finished Brownies

Remove the pan from the oven and allow the chocolate Brownie Bites to sit and cool completely. About an hour.

To remove the bites from the pan, make sure the brownies are completely cool and set. Gently twist the bites out of the pan or use the tip of a sharp knife to gently loosen. Be careful not to scratch up the pan!

Serve and enjoy!

How long do brownie bites bake?

These chocolate Brownie Bites should bake for no more than 13 minutes. That’s really the max for a soft and chewy center.

You want to pull the brownies out slightly underbaked since they’ll continue to cook a few minutes after you take them out of the oven.

When testing for doneness, make sure the centers have risen, the tops look shiny, and when you stick a toothpick in the center, wet and fudgy crumbs should cling to the toothpick–the toothpick should NOT come out clean.

Want a SUPER fudgy brownie? Bake those babies for only 11 minutes. They’ll barely be done and you’ll be in fudgy chocolate Heaven.

For a just “fudgy enough” center and nice brownie edges, stick to the 12-minute mark. It’s the best of both fudgy center and crisp edges.

Brownie edge fan? Bake the bites for 13 minutes, and you’ll have edges to the max with just enough chew in the center to still call it a brownie.

Just as an FYI, these times are based on my current oven with the rack in the lower third position. Your cooking times may differ based on the efficiency of your oven!

Fudgy and Chewy Brownie Bites

Do I need to use paper liners for these Chocolate Brownie Bites?

Nope! I haven’t used them, just make sure you grease the muffin pan really well. Even if the pan is nonstick!

The brownie bites do need to be loosened slightly when removing from the pan, but they come out very easily after.

You of course can use liners if you feel more comfortable! A silicone muffin pan would make removing the bites super easy as well.

Storing Your Brownie Bites

Store your completely cooled Brownie Bites in an airtight container at room temperature for 3-4 days.

These can also be kept in the fridge, but it’s not mandatory. The fridge won’t keep them from drying out, but the texture of a chilled brownie bite is divine. Make sure to still store them in an airtight container.

Can I freeze Chocolate Brownie Bites?

YES! I love freezing these.

When you’re ready to serve, just thaw them out in an airtight container either at room temp or in the fridge.

Or if you’re like me, let them thaw out just enough to be able to bite in to them and eat them partially frozen.

They’re so stinkin’ delicious ice cold!

Mini Chocolate Brownie Bites

Well, I don’t need to tell you that eating these chocolate Brownie Bites straight up is the way to go, but I wanted to make sure you knew how versatile these little beauties are. Here is a short list of possibilities and recommendations:

  • Add them to an ice cream sundae. They literally scream for ice cream
  • They make a great gift to give a loved one
  • Stick them on a dessert charcuterie board
  • They’re the perfect size for a chocolate fondue
  • Cut them in half to use in a trifle
  • Add them to a bowl of yogurt with peanut butter for the ultimate snack
