Wash and scrub the potatoes really well and cut them into ¼” thick french fries.
Move the fries to a bowl and add enough water (warm or cold) to cover the potatoes by 1 inch. Soak the fries for 30 minutes to remove the starch.*
After soaking, rinse the potatoes under cold water until the water runs clear. Lay out the fries on a towel and dry well.
Preheat your air fryer to 350 degrees F and add the fries to a mixing bowl with 1 tablespoon of oil. Toss until well coated.
Pour the fries into the hot air fryer, do not wash the bowl. Cook fries for 15 min at 350 degrees F, shaking halfway through cooking. The fries will be soft and browned in spots.
Gently remove the fries and add them back to the mixing bowl. Toss in 2 tablespoons of oil and 1/2 teaspoon salt. Heat the air fryer to 400 degrees F.
Add the fries back to the air fryer basket and continue frying for 10-15 minutes at 400 degrees F, shaking every 5 minutes. Cook until all the fries are golden brown and crispy.
Pour the cooked french fries onto a plate lined with paper towels and sprinkle with additional salt. Serve hot.
