
This Greek yogurt bark is the ultimate HEALTHY frozen dessert recipe. Plain Greek yogurt is lightly sweetened and topped with a variety of healthy and sweet toppings to make it extra delicious. Freeze for a few hours and you've got yourself the perfect summer time treat. This Greek yogurt bark is great to make with the kids, and they'll love eating it even more! Best yet, they'll never know it's good for them.

How to make frozen yogurt bark:
Ingredients for the bark base:
- 2 cups of plain whole milk Greek yogurt (regular yogurt is just fine too!)
- 3 tablespoons of honey
- 1 teaspoon of pure vanilla extract
For Frozen Greek Yogurt Bark with Strawberries and Blueberries:
- 1 teaspoon of fresh lemon zest
- Sliced fresh strawberries
- A handful of fresh blueberries
For White Chocolate Raspberry Bark:
- 1 teaspoon of fresh orange zest
- Fresh raspberries
- 2-3 tablespoons of white chocolate chips (or more to taste)
For Yogurt Bark with Peanut Butter and Banana
- ¼ cup of peanut butter
- 1 ripe medium sized banana, sliced thin
- 1-2 tablespoons of mini chocolate chips
Instructions:
To make the Greek yogurt bark base, start by lining a cookie sheet with parchment paper and set aside.
Next, in a small bowl, combine the yogurt, honey, and vanilla. Whisk until well combined and smooth.
To make the Greek yogurt bark with strawberries and blueberries:
Add fresh lemon zest to the base ingredients and whisk until smooth.
Pour the yogurt onto your parchment lined cookie sheet and spread it into an even layer about ¼" thick. Don’t worry about spreading the yogurt out to the sides of the pan.
Evenly distribute the sliced strawberries and blueberries, pressing gently into the yogurt to secure. Pop in the freezer and freeze for 4-6 hours until completely frozen.
To make the raspberry, white chocolate frozen yogurt bark:
Add fresh orange zest to the base ingredients and whisk until smooth.
Pour the yogurt onto your parchment lined cookie sheet and spread it into an even layer about ¼" thick. Don’t worry about spreading the yogurt out to the sides of the pan.
Distribute raspberries over the top of the greek yogurt base. Lightly press the berries into the yogurt to secure.
Sprinkle white chocolate chips over the top as well.
Pop in the freezer and freeze 4-6 hours until completely frozen.
To make frozen yogurt bark with peanut butter, chocolate, and banana:
Prepare the base as above.
Pour yogurt base onto a parchment paper lined cookie sheet and spread evenly into a layer about ¼" thick. Don’t worry about spreading the yogurt out to the sides of the pan.
In the microwave, heat the peanut butter until just melted—but not hot(about 15-20 seconds). Set aside.
Press the sliced banana into the yogurt base to secure and drizzle the melted peanut butter over the top of the bark. Then sprinkle on the mini chocolate chips.
Pop in the freezer and freeze 4-6 hours until completely frozen.
How to cut frozen yogurt bark
Once your bark is completely frozen, you can peel the bark off the parchment paper and break it up in large chunks by hand. This will give you nice random size pieces--just like chocolate candy bark.
If you want your yogurt to be more uniform or in the shape of bars, you can use a large kitchen knife to chop the bark into squares. I recommend chopping the bark BEFORE removing the parchment paper. Your cuts won't be perfect, but the parchment paper will hold the bark in place better as you make your cuts. Once your bars are cut, then peel them off the parchment and serve.
What yogurt should I use?
I like to use plain, whole milk Greek yogurt. I opt for the plain flavor because I like to control the sweetness, but that's a personal preference.
If you're not a Greek yogurt fan, feel free to use what you have in the house or whatever your family loves. This is also a great way to use up some yogurt that's about to expire.
There are really no rules.
If you want to use flavored yogurts like vanilla, strawberry, chocolate, etc... just omit the honey so that the bark is not too sweet.
Nonfat and low-fat yogurts are perfectly good to use too. The texture may be a little different than using whole milk, but the recipe will totally work!
Is Greek yogurt good for you?
Greek Yogurt is full of good stuff like protein, live gut healthy bacteria (probiotics), and calcium!

It is up for debate whether or not probiotics are lost during the freezing process. Articles I've read explain that as long as your yogurt has live active cultures in it, the cultures will go dormant during the freezing process, and will wake up once it hits your stomach. So you can rest assured you're still getting all the good stuff in this tasty frozen snack!

How long does frozen yogurt bark last?
You can store your bark in an airtight container, in the freezer for up to a month!
This bark is also delicious blended in to smoothies!

The sky is the limit when it comes to making Greek yogurt bark! Feel free to opt for healthy frozen yogurt toppings or go nuts and top with all the sweet goodies in your pantry. The best part of this recipe is that you can use what you have on hand. Here are just a few ideas:
- Sprinkle on any of your favorite toasted chopped nuts or peanuts
- Coconut is divine-sweetened or not is your choice
- Granola is made for this treat
- Sunflower or pepitas add a nice crunch
- Add a little lime zest for a tropical feel
- Jams would look really pretty swirled on top--especially with peanut butter for a PB&J experience
- Trail mix would be so very delicious scattered over the top
- Use your favorite dairy free yogurt!
Tips
- Don't worry about spreading the yogurt out to the edges of the pan. ¼" thick is a good size for holding toppings and taking bites.
- I like letting my chunks of bark sit for a couple of minutes to soften slightly before biting--that's just my personal preference
- Only serve the bark you need, it melts quickly so keep whatever you're not using back in the freezer.
- Any yogurt you love will work, but I find using whole milk yogurt makes for a smoother and creamier bark!
