Line a cookie sheet with parchment paper and set aside.
Melt the white chocolate chips or colored candy melts
Microwave Method: In a heat proof, microwave safe dish (I use a pyrex measuring cup) microwave the melts for 1 minute and give a stir. Continue to melt in 15 seconds bursts , stirring until completely melted and smooth. Tip: If using white chocolate chips, melt for about 45 seconds at first and keep heating in 15 second bursts until melted and stirred smooth.
Double Boiler Method: Candy melts and white chocolate chips can be placed in a heatproof bowl set over barely simmering water. Stir until melted.
Once the chocolate is melted, Spoon the coating over the pretzel rods, covering about 3/4 of the pretzel.
Lightly shake off excess chocolate or candy coating back into the dish. The coating on the pretzel rod should be even and smooth.
Set the coated pretzel on the parchment paper lined sheet pan and continue coating the pretzel rods until you run out of chocolate.
While the chocolate or candy coating is still wet, add sprinkles and decorations.
Once decorated, let the candy coating harden for about 15-20 minutes at room temperature, or pop the pretzels in the fridge to set in half the time.
Serve and enjoy! Store any leftovers in an airtight container for up to 10 days.
