Homemade Sugar Cookie Syrup

Combine the sugar and the water in a small saucepan. Bring to a boil over high heat.
Once boiling, reduce the heat to medium and simmer for 5-7 minutes until the sugar is dissolved, the mixture is clear, and the consistency is syrupy. Remove from heat.
Off heat, whisk in the butter and vanilla extracts.
Cool for iced coffees or use immediately.
Notes
Butter extract is not dairy free, but you can swap in 1/4 teaspoon of almond extract if needed
Add the extracts off heat for the best flavor.
This syrup is thin, but if you want it thicker, boil the water and sugar for 5 extra minutes.
