Homemade Sugar Cookie Simple Syrup

As a working mom who’s planned more meals and coffee breaks around nap schedules than I can count, I’m a pro at finding ways to add joy to the everyday. This Homemade Sugar Cookie Syrup is one of my favorite simple tricks—it saves you time, money, and lets you treat yourself any time you need it.

This easy, budget-friendly Sugar Cookie Coffee Syrup brings all the cozy sweetness without the $12 price tag. Add it to hot or iced coffee, lattes, or holiday cocktails.

This easy recipe only needs 3 ingredients (plus water). What could be simpler?

  • Vanilla Extract – make sure your extracts are fresh to get the most out of their flavors

This simple sugar cookie syrup recipe comes together as easy as 1, 2, 3.

Step 1

Combine the sugar and water in a small saucepan and give it a slight stir. Bring to a boil over high heat.

Once it is boiling, reduce to medium heat, and bring the mixture to a simmer. Let simmer for 5-7 minutes until the sugar is dissolved, the mixture is clear, and the consistency is syrupy.

Take the pan off the heat and whisk in the butter and vanilla extracts. 

Cool for iced coffees or use immediately for hot beverages.

  • Do not add the flavoring extracts during the boiling period, or the flavor will cook out.
  • The consistency of this Sugar Cookie Coffee Syrup is thin but syrupy. If you want a thicker syrup, simmer for 10 to 15 minutes, or until desired consistency is reached.

Substitutions & Variations

  • Swap the butter extract for ¼ teaspoon almond extract. Butter extract contains milk, so this is a good option for a dairy-free substitute. Almond extract is strong, so start small and add more to taste.
  • Use all brown sugar or a combination of brown and white sugar for extra flavor. Dark brown sugar or light brown sugar can be used.
  • Try a little peppermint extract for an extra holiday feel or add a little lemon extract in the summer. You can make a variety of easy homemade syrups to have on hand.

  • Sugar cookie coffee syrup is great in your morning coffee or cold brew. You can even make your own cookie latte recipe (see below).
  • Add a tablespoon of syrup to a homemade cold foam cream.
  • It’s also the perfect addition for mocktails, cocktails, and hot or iced teas or even hot chocolate.
  • You can even drizzle it on pancakes and waffles.
  1. Add 3 tablespoons of Sugar Cookie Syrup to a mason jar and fill with ice.
  2. Pour 1/2 cup of strong coffee or a couple of shots of espresso over the ice.
  3. Froth 1/2 cup of cold almond milk (extra creamy works best) and pour over the coffee. Top with red and green sprinkles and enjoy!

  • Allow the syrup to cool completely before storing.
  • Pour the room temperature syrup into a clean glass jar or airtight container with a tight fitting lid. A Mason jar works great.
  • Store in the refrigerator for 4-6 weeks.
What if I don’t have butter extract?

You can omit the butter extract entirely, but that would affect the flavor. Almond extract is a great substitute, just start off with ⅛-¼ teaspoon, since it’s super strong. That will give you a similar sugar cookie taste!

Can I use real butter instead of extract?

I do not recommend it. The flavor isn’t as strong as the extract, and when you chill the syrup, the butter solidifies and makes the syrup lumpy.

Can I use this syrup in non-dairy milk?

This syrup tastes great in oat milk, soy milk, coconut milk, etc! But it is not dairy-free because of the butter extract (contains milk), so swap the butter extract for 1/4 teaspoon almond extract if you can’t have dairy!

Can I double the recipe? 

Yes! You can double or reduce the recipe easily! The recipe as written makes 1½ cups.

  • Add the extracts off heat for the best flavor.
  • This syrup is thin, but if you want it thicker, boil the water and sugar for 5 extra minutes.
