Tips for Making Ice Cream with an Ice Cream Maker
- Make sure your canister’s been in the freezer for at least 24 hours—it needs to be fully frozen to do its job.
- Chill your ice cream base to 50°F or lower before churning. This helps prevent ice crystals and gives you that super creamy texture.
- Just churned ice cream is always very soft. Pop it in the freezer for a couple hours if you want a hard serve consistency.

Recommended Ice Cream Maker

There are many different models of ice cream makers out there by Cuisinart, but I use the double insulated 1.5 quart Ice Cream Machine. It’s the perfect size for most common recipes and I love how evenly it churns my ice cream base and how easy it is to clean up.

Can you let it run longer than 20 minutes? Mine wasn’t very firm.
You can, but it depends on your ice cream machine. The key is making sure the ice cream canister chills for 24 hours so the liquid inside the walls of the canister is fully frozen—otherwise, your ice cream won’t set. The longer it churns, the warmer the canister gets. And keep in mind, fresh ice cream will always be soft-serve. For a firmer texture, freeze it for a couple of hours after churning.
