We’re in the throws of summer now and I can’t think of a better way to celebrate summah-time than with these Golden Grahams S’mores Bars.

Around these parts, we Mainers like to go “upta camp” at some point during the summer. This means we drive to our rustic little houses in the woods and enjoy a week of swimming, kayaking, hiking, and all kinds of other outdoorsy things.

You definitely squeeze way too many people in your small house. You always have to bring in your own drinking water. And it’s the week you look forward to all year.

Now for my family, I have made it my personal mission to make sure there are s’mores fixin’s when we get up to camp. And this is a task I take very seriously.

But outside of camp, that mission has started to carry over to my day to day life. Especially since I now have this no bake Golden Grahams S’mores Bar recipe in my arsenal.

Now there’s no excuse to wait until summer to have s’mores! I can just make a pan of these babies any time I want!

Since these bars are totally indoor friendly, you may be asking yourself, “wait a minute! what about my charred marshmallows?”

Well, don’t worry your pretty little head. We use the broiler to achieve that.

A Few Reasons Why Golden Grahams S’mores Bars Are So Delicious

A look at all the layers of marshmallows, chocolate and graham cereal

First reason

The Golden Grahams cereal!

These bars are a lot like a Rice Krispie treat. However, Rice Krispies don’t give me the quintessential graham flavor I’m looking for in s’mores.

So to make the bars super s’mores-y, we swap out the Rice Krispies for Golden Grahams. Using the cereal will also allow the bars to stay crisper for longer.

And honestly Golden Grahams are just really, really delicious!

Second reason

You’re served marshmallows three ways!

That’s right! First, we melt them with some butter to act as the glue to hold everything together.

Then we stir in some whole mini marshmallows–just so you can get some nice chewy globs of sweet ‘mallowy goodness in each bite. I want you to really know the marshmallows are in there!

And to top it all off (literally), we pour more marshmallows on top of the gooey Golden Grahams mix and broil them until they’re golden brown, roasty, toasty.

Third reason

The Hershey’s Chocolate!

I like to use actual Hershey’s Chocolate bars for the chocolate component in this dessert. It just makes it taste so much more like traditional s’mores!

Much like the marshmallows, I like to see the chunks of chocolate throughout the bar. I also don’t want the chocolate to melt and get lost in the hot marshmallow mixture, so I freeze the chocolate pieces and quickly stir them in with the cereal and mini marshmallows.

Now when you bite into the bar, you get a nice chunk of chocolate, a gooey piece of marshmallow, and it’s all encased in delicious graham flavored cereal.

Final Reason

The roasted marshmallows!

So roasted marshmallows are a big deal when it comes to s’mores, and these bars have ’em!

We use our old friend, the broiler, to caramelize and “roast” the marshmallows on top of these bars.

You can also use a kitchen torch if you have one.

If you don’t have access to a broiler or a little kitchen torch, skip the marshmallow topping! These bars are fabulous still!

Can I feed a crowd with these bars?

Definitely!

These are so easy to make, it’ll be a cinch to make a couple pans to feed a big group! And these bars are on the thick side, so you can definitely cut them into 16 squares vs. 12 squares.

Storing Your Golden Graham S’mores Bars

If for some reason you don’t eat them all immediately, these bars should be stored in an airtight container for up to 2-3 days.

I do not recommend freezing these. The Golden Grahams would get soggy and the extra moisture would impact the marshmallows

But again, you won’t have to worry about long term storage for these. They’ll be gone in 6 seconds.

Pro Tips

Golden Grahams S'mores Bars

I’ve made these bars a few times now and I picked up a couple tips and tricks that may make your life a little easier!

  1. Freeze the chocolate. Pop whatever chocolate you’re using in the freezer for at least 20 minutes before making these bars. This is totally a personal preference. I like seeing the chocolate chunks throughout my bars, so freezing the chocolate helps to preserve the chocolate’s shape after the hot, melted ‘mallow mixture hits it. I also try to keep the chocolate hidden under a layer of cereal, so the Golden Grahams get hit with the hot liquid first.
  2. Grease your spatula. When you are stirring the melted marshmallow goo into your cereal and chocolate mixture, make sure the spatula is greased. It’ll be easier to stir.
  3. Grease your knife. When you’re ready to cut these bars into squares, make sure your knife is greased with some butter or cooking spray. Those roasted marshmallows and the mini marshmallows inside the bars are super sticky. A greased knife will make for cleaner cuts.
  4. Use a serrated knife if you have one. Use a serrated or a bread knife to cut up the squares. Like above, it just makes a cleaner cut. No sweat if you don’t have one. Whatever knife you use, make sure you grease it!

How to make Golden Grahams S’mores Bars

Ingredients for How To Make Golden Grahams S'mores Bars

Makes 12 Bars

Ingredients:

  • 4 cups Golden Grahams cereal
  • 7 1/2 cups mini marshmallows
  • 4 Hershey bars chopped into chunks or 1 1/4 cup of semi-sweet or milk chocolate chunks
  • 5 tablespoons of unsalted butter
  • 1/2 teaspoon of vanilla
  • 1/4 teaspoon of salt

Instructions:

Place your chopped Hershey’s bars or chocolate chunks into the freezer. Freeze at least 20 minutes.

Line an 8″x 8″ pan with foil, ensuring there is a little overhang on the sides. Grease the foil with butter or cooking spray.

In a medium sized saucepan ( I used a 2 quart size), melt the butter and 5 cups of mini marshmallows over medium heat until melted and smooth.

Turn off the heat and stir in vanilla and salt.

Combine the cereal, 1 cup of mini marshmallows, and frozen chocolate pieces in a large bowl. Try to keep the chocolate hidden under the cereal to prevent immediate meltage when the hot marshmallow mixture hits.

Pour melted marshmallows over the cereal mixture.

Using a greased rubber spatula, fold everything together quickly until all ingredients are evenly coated in the melted marshmallow goo.

No Bake Golden Grahams S'mores Bars in the pan

Using a piece of parchment paper or plastic wrap, press s’mores mixture into the prepared 8″x 8″ pan until it’s evenly distributed and compact.

Add the remaining mini marshmallows to the top of the bars and spread into an even, single layer.

To “roast” the marshmallows:

Move your oven rack 3 rows down from the top. Set the broiler to high.

Place the baking dish under the broiler, leave the oven door cracked open so you can watch the marshmallows. DO NOT TAKE YOUR EYES OFF THAT PAN.

Broil for 45 seconds to 1 minute until the top marshmallows are golden brown and roasted.

Remove s’mores bars from oven and let sit at room temp for at least 2 hours.

Using your foil overhangs, gently remove the bars from the pan and set on a cutting board.

Take off the foil and discard. Cut bars into 12 squares, using a knife that has been greased with butter or sprayed with cooking spray.

Store in an airtight container for up to 3 days.

Other ways to jazz up these S’mores Bars

  • Stir in colored mini marshmallows for a fun pop of color
  • Use chocolate chips in place of Hershey’s Chocolate bars
  • Dip these bars in melted chocolate and sprinkle with sea salt
  • Omit the Hershey’s bars and stir in some frozen Reese’s cups–chopped into chunks.
  • Add M&Ms or Reese’s Pieces!
